I rarely do product reviews for packaged gluten-free baking mixes or finished baked products. That’s because most consist primarily of empty-calorie starch flours, which may taste delicious, but are hard to give the thumbs up to from a nutrition perspective. Purely Elizabeth baking mixes allow me to make an exception, as they are made with all natural, organic, nutritious ingredients.
Purely Elizabeth makes gluten free cookie, muffin and pancake mixes that are:
- all natural
- organic (they are in the process of going through organic certification)
- made with nutrient rich flours and seeds, including whole grain millet, teff, buckwheat and corn flours, garbanzo bean, fava bean and almond flours, and flaxmeal and chia and hemp seeds
- free of refined sugar, gluten and dairy
- free of artificial colors, flavors, sweeteners, preservatives and GMO’s
So now that you know that Purely Elizabeth makes for a better-for-you cookie, muffin or pancake, the real question is how do they taste? I have not used the baking mixes at home myself, but I have sampled the products at Expo East and gluten-free fairs, and they are quite delicious. Expect a nuttier and grainier flavor and not an overwhelmingly sweet product.
The cookie mixes come in chocolate chip, oatmeal cinnamon raisin and oatmeal cherry chocolate chip flavors; the muffins in apple spice, blueberry and cacao chocolate chip; and there is a plain pancake mix to doctor up how you like.
